CHRISTMAS MENU

Cocoa-Marble Foie Gras with apple chutney, pink peppercorns and cinnamon, served with toasted brioche

Seared Scallops with Jerusalem artichoke, Grenoble walnuts, and a bard-flavored jus with Vin Jaune

Confit Arctic Char with Doubeurre squash, Nantua sauce, and tarragon

Farm-Raised Capon Ballotine with chestnuts, stuffed baby cabbage, chanterelle purée, and truffled Poulette sauce

Christmas Tree Dessert in the style of a Mont-Blanc with citrus by Étienne Schaller

Truffle Egg Raviolo with molten yolk, salers, and browned butter

Scallops in Persillade with smoked potato, shellfish and seaweed jus, and squid ink

Pan-Seared Foie Gras glazed with chestnut honey, Jerusalem artichoke purée scented with Tonka bean, Jerusalem artichoke chips, and duck jus

Roasted Venison Loin with gigot cromesquis, celery and lovage, served with classic Grand Veneur sauce

Chocolate Clock with almond praline by Hervé Lauzier and orange blossom crème anglaise
