SOMMELIER'S ASSISTANT

Reporting to the Head Sommelier, he joins a dynamic and passionate team. He ensures the establishment and smooth running of the drinks service in the dining room and he assists the sommeliers on a daily basis. Its main missions are as follows:
• Take care of the organization and implementation of the cellar of the day according to the instructions of the Head Sommelier
• Assist the sommelier of his rank with the reception and storage of wines in the main cellar.
• Participate in the smooth running of the service in the 3-star restaurant, from the aperitif to the drinks at the end of the meal.
• Ensure the preparation and placing of orders taken in the dining room by the sommeliers.
• Also prepare the offices according to the needs of the service
• Arrange the glasses on the tables in accordance with the House's standards.
• Present, uncork and taste wines ordered by customers.
• Know the drinks and wine list
• Serve the wines according to the rules and quality criteria under the instructions of the sommelier.
