On Thursday, December 11, La Dame de Pic Paris will host a new winemaker’s dinner in the company of Verónica Ortega, winemaker and owner of Domaine Verónica Ortega, located in the heart of Spain, in the province of León.
Originally from Cádiz, Verónica grew up in a family where tradition and courage were central values: her father, a renowned bullfighter, still inspires the visual identity of her estate today — a sword planted in a barrel, a nod to her roots.
Driven by an insatiable curiosity, she traveled the world after completing her studies, building an exceptional and rarefied résumé: the Priorat at Clos Erasmus and with Álvaro Palacios, Burgundy with Comte Armand and the legendary Domaine de La Romanée-Conti, the Rhône with Laurent Combier, New Zealand at Burn Cottage, the Douro with Niepoort, and finally Bierzo with Raúl Pérez. This journey shaped her style, blending precision, depth, and a gentle touch in winemaking.
In 2012, Verónica settled permanently in Valtuille de Abajo, in the heart of Bierzo, where she developed her own intimate estate — a project that began in 2010 while she was still working in France. Her wines quickly became cult favorites, though production remains intentionally limited: just five hectares, spread across some of the finest terroirs in the region. While she produces mainly elegant reds, she also crafts a small volume of rare and sought-after whites.
For this evening, the creations of Chef Anne-Sophie Pic will harmonize with the distinctive wines of Verónica Ortega, offering a sensitive and vibrant experience, between gastronomic elegance and the pure expression of Bierzo’s terroirs. A precious encounter, reflecting the remarkable journey of this extraordinary winemaker.
